Edamame Hummus is a creamy and nutritious dip that swaps out chickpeas for edamame (green soybeans). Bursting with flavor, it combines the earthiness of tahini, the zing of lemon juice, and the creaminess of olive oil. The addition of garlic adds depth, while fresh cilantro lends a bright herbal note. Edamame hummus is a great source of plant-based protein and pairs beautifully with sliced vegetables, whole-grain crackers, or warm pita bread.
Ingredients:
⅓ cup tahini
⅓ cup lemon juice (about 2 to 3 lemons)
3 tablespoons extra-virgin olive oil (plus more for garnish)
1 medium clove garlic, roughly chopped
½ teaspoon fine-grain sea salt
½ cup lightly packed fresh cilantro leaves (plus more for garnish)
1 ½ cups shelled edamame (10 ounces), preferably organic, defrosted if frozen
2 to 4 tablespoons water, as necessary
Sesame seeds for garnish (optional)
Instructions:
In a food processor or high-powered blender, combine tahini, lemon juice, olive oil, garlic, and salt. Process until well blended.
Add cilantro and process until smooth.
Add half of the edamame and 2 tablespoons of water. Process until creamy, adding more water if needed.
Garnish with additional cilantro and sesame seeds.
Serve with your favorite dippers and enjoy!
